Muffins bursting with juicy blueberries

Here's THE blueberry muffin recipe you need to try! It's by Alison Roman who came up with it after much trial and error postpartum while she was craving the perfect blueberry muffin.

When I opened the oven to see the result, I was astonished that it looked that good! They taste delicious, not too sweet and so juicy with all the blueberries bursting in them.
Couple notes:
You need 2.5 cups of blueberries, I recommend getting the 18oz container of organic blueberries from Costco for this (if you have a membership) as the most cost effective way to get them.
The recipe actually made more batter than would fit in a 12 cup muffin tin, so I poured the extra into a little loaf pan for a blueberry loaf!
I'm also freezing some of these babies for another day when I'm craving a scrumptious muffin. I used plant butter for this recipe but then I realized the kids can't take it to school because it has nuts in it now (cashews) so next time I will use regular butter. I think it would be a great snack for school. Plus this is so much better than the grocery store muffins that have too much sugar in them.
Btw the kids helped me make them too in case you need a fun activity to do together. There was much arguing about who got to stir and someone dumped a measuring cup of sugar onto the counter when I was getting something from the fridge. 🫠 Oh wells! Lol worth the mess.
