Chocolate Zucchini Muffins for Teacher Appreciation week

Today was the start of teacher appreciation week! As a thank you to our kids' teachers, I baked them some chocolate zucchini muffins for a cozy start to a Monday morning!


All the credit goes to Chef Bae who I got the recipe from. Some of the credit also goes to my hubby who watched the kids while I embarked on this baking project over the weekend. 😛


It was my second time making them and it took me a long time because I'm slow in the kitchen 😅 but they are amazing and you should make them too!


There's nothing too hard about them, it's just mixing a bunch of ingredients together and grating some zucchini. (Also zucchini is a hard word to spell. I realized after I spelled it wrong on all the bags I labeled, oops.)


Here's the goods, the recipe!


I doubled the recipe because I wanted to make enough for the school staff. I also cooked them longer than stated in the recipe because my first batch felt a little underdone and tasted doughy. So I baked them longer almost to the point of overcooking them and actually they still tasted good and moist! So I think the recipe is quite forgiving.


Another great thing about this recipe, aside from being utterly delicious, is that it's dairy free and gluten free (though it has eggs) so that is definitely helpful when the people you're feeding have dietary restrictions. That is why I ended up also getting Enjoy Life chocolate chips because they're free of a lot of allergens.


The first time I made the recipe I didn't have gluten free flour, so I did use all purpose flour and that was fine. I also don't have coconut sugar, so I used regular sugar. And I used a Lily's chocolate bar that was rough chopped the first time around. I like the rough chopped approach more so than chocolate chips because it gives it a little rustic bakery style feel and the chocolate shreds blend in more seamlessly to the muffin than the chips.


Whichever route you decide to go, be sure to sprinkle some chocolate on top of the muffin so that the chocolate is visible after it bakes.


Wow that's the longest I've ever written a post about a recipe. But you bake and you learn! The teachers loved the muffins, so I'm happy! Mission accomplished.
