Bags of freshly milled flour at The Midwife and The Baker in Mountain View

When ordering online at The Midwife and The Baker, I noticed that they have flour for sale too! I thought that was a remnant from Covid times when restaurants were selling baking ingredients like flour, sugar, yeast etc.. But upon closer inspection, actually they mill their own whole grains at their kitchen in Mountain View, so this is freshly milled flour!

I want to make some fig bars which call for white and wheat flour, so I got a bag of Hard White Flour and a bag of Hard Red Flour (the two bags on the right). They also showed me the all purpose bread flour (the larger bag on the left).

The lady helping me also said that spelt flour is good too. She said that they usually have their flour in stock, and there's a customer who comes every week to buy 6 bags of spelt flour! When I was leaving, I also saw another customer leaving with a bag of flour, so it seems like it's a pretty popular thing to do!

I haven't baked with it yet, but I'm excited to try it out!
