I first learned about Kamut from The Food Nanny. It's an ancient grain so it hasn't been as modified compared to other grains. It's also known as Khorasan wheat, and is a low glycemic index food (GI of 45) so it's slower to digest and doesn't spike blood sugar as much (for those who are trying to regulate their blood sugar).
And I was pleasantly surprised to find that a local bakery sells Kamut baguettes! You can get them at The Midwife & The Baker in Mountain View or at different local markets that carry breads/pastries from them.

On the day I went, Midwife & Baker didn't have the baguettes in stock anymore 🙁 but luckily I found it at Piazza grocery store!

It does have a more earthy, nutty flavor but it's good! I could totally get used to eating baguettes like this instead of white flour baguettes. Also when I toasted it with Kerrygold Garlic & Herb butter, it was soooo good!!
So there you have it, a Kamut baguette that is better for blood sugar balance!
Check out the other breads that this bakery has: country loaf, whole wheat loaves, walnut and currant, rye, and more. They also sell flour too! Including spelt flour. I don't know how that tastes, but sounds healthy!
